Hours and hours go into our meat. The wood, the fire, the unforgiving heat and permeating smoke - we truly love what we do.  It is everything you love about your hometown smoked meats with all the big flavor only a chef can bring.

We use a mixture of red oak and hickory. Red oak creates a medium to heavy smoke and a long burn. Hickory has a heavy hand with its smoke. The combination of the two brings a distinctly rich flavor to the meat.

the story of a chef

Even as he honed his skills as a classically trained chef in one of the world’s top culinary schools, an ambitious young student who hailed from Oklahoma, dreamed of mastering those sauce-making skills to be used as the perfect compliment to... barbecue.

 

As a rising young chef in restaurants frequented by the world’s rich and famous, he crafted the most intricate and delicate courses, always dreaming of building his own masterpiece.

Even as he sought the most fresh local ingredients in exotic locations around the globe as a private chef on luxury yachts, his dreams kept returning the Midwest, where he could use the best local products to bring barbecue flavors to a whole new level.   

 

Even though his fine-dining restaurant was the recipient of the 2017 People’s Choice Award for the best restaurant in Arkansas, this young chef, with the world at his feet and a culinary brush in his hand, was not content until he had fulfilled his ultimate dream.  Not to just have  a barbecue restaurant, but to conquer the art of barbecue, with the best smoked meats in the Midwest.  

 

On October 17, 2018, with a dream location on Dickson Street in Fayetteville, Chef Slane paired with his equally talented wife, Autumn Slane to debut his newest restaurant, simply called Sauced. It was a true labor of love, as the chef turned his gastronomy talents toward every phase of building, renovation and decor, just as he had done with his flagship restaurant, Grotto Wood-Fired Grill • Wine Cave in Eureka Springs.   

 

Serving the best in smoked meats, barbecue and craft brews, this restaurant is sure to hit a home run equally with those looking for back to basic comfort food served up homestyle on metal trays, and those who have an appreciation for the talent, expertise and sleepless nights of a classically trained chef who is willing to prepare meats the slow way for hours, and pair that labor of love with the finest accoutrements.
